Carrot Cake

Ingredients

• 1½ cups flour

• ¾ cup sugar

• ½ cup oil

• 2 eggs

• 1 cup grated carrots

• ½ cup milk

• 1 tsp baking powder

• ½ tsp baking soda

• 1 tsp cinnamon

• ½ tsp nutmeg (optional)

• ½ tsp salt

• 1 tsp vanilla

 

Steps

1. Whisk eggs, sugar, oil, and vanilla.

2. Add milk and grated carrots.

3. In another bowl, mix flour, baking powder, baking soda, salt, and spices.

4. Combine wet + dry (don’t overmix).

5. Pour into greased pan.

6. Bake at 175°C for 35–40 mins.

7. Cool and frost (cream cheese frosting works best).
