Veggie Omelette Muffins

Easy, healthy, and perfect for meal prep!

Ingredients:

6 large eggs

1/2 cup milk

1 cup chopped mixed veggies (peppers, spinach, onions, mushrooms)

1/2 cup shredded cheese

Salt & pepper to taste

Instructions:

Preheat oven to 375°F (190°C). Grease 12-cup muffin tin.

Whisk eggs + milk, season with salt & pepper.

Mix veggies and cheese in a bowl.

Fill muffin cups 1/3 with veggie mix.

Pour egg mix to fill 3/4 full.

Bake 20–25 mins until set & golden.

Cool slightly, then serve!
